Recognised throughout Ireland as a leading member of the craft butcher fraternity, he has won numerous awards for his sausages, puddings and dry cured rashers. He had all-Ireland success in 2005 as ‘Supreme Champion Sausage Maker’. In 2012 Hugh won European Award for Best Sausages and also purveyor of finest quality meats.
